Crispy Chicken slices served along with a flavorful Lemony Cajun style Pasta! Perfect way to end your day!

Sometimes, it is tough to go out on a date night or special occasion dinners/lunches with kids and other responsibilities. So, when you still want to make that extra someone feel extra special and show your fancy cooking skills, this is a great entree dish to try out!

When I’m in a mood or feel like I have a little extra energy boost by the end of the day, I like to whip up something nice like this for dinner. Which goes perfectly with your favorite glass of wine!

I’ve said in my previous posts that I absolutely enjoy cooking with pasta and white wine-based sauces. I think it all started when I had my first Shrimp Scampi & Chicken Piccata. The realization that there are other sauce bases apart from Marinara was like a newfound fact, and I fell in love with it instantly.

Now, my family and I like our chicken slices to be thin and crispy. I find it easier to feed the kids too with thin pieces than thick ones. If you prefer thicker slices, then proceed that way.

Tips on getting crispy breaded chicken.

  • I have used two fillets of chicken breasts. Two thick breast fillets yield at least eight thin slices.
  • Cut the breast fillet in butterfly slices( hold the fillet down with one hand, gently slide the knife through the middle till you reach about 3/4th of the chicken.) Then, open the slice up and cut all the way.
  • Now cut each halved slice into other slices following the same method.
  • I am using a tbsp of Rice Flour in the Flour, which results in a crispy coated chicken.
  • Coat the chicken in seasoned flour, dust off the excess, and shallow fry in olive oil, up to 3 minutes aside.

Ingredients
  

  • 1 lb Linguine or any long pasta of your choice
  • 2 Chicken Breasts Fillets Thinly sliced into 8 slices
  • 1/2 cup All Purpose Flour
  • 1 tsp Each Salt, Pepper and Garlic Powder
  • 1 tbsp Rice Flour
  • 3 tbsp Olive Oil
  • 4 tbsp Butter
  • 1 Onion ,medium size, chopped
  • 1 Tomato, such as Roma , Chopped
  • 4 Garlic Cloves , finely chopped
  • 1 tbsp Cajun Seasoning
  • 1/2 cup White Wine
  • 1/2 cup Chicken Stock
  • 3/4 cup Heavy Cream
  • 4 oz Capers , in a jar, drained
  • 1 tsp Red Chilli Flakes optional
  • 1 Juice of a whole Lemon
  • 1 cup Baby Spinach
  • 1/2 cup Parmesan Cheese

Instructions
 

  • Bring water to a boil and a tsp of salt, and cook pasta according to the instructions. Make sure to cook a minute less than al dente, as the pasta will further cook in the sauce.
  • Meanwhile, prepare the chicken by cutting it into thin slices. In a bowl, mix flour, salt, pepper, garlic powder, and rice flour. Coat the chicken slices well in the mix and set aside.
  • In a deep pan or Dutch oven, heat 3 tbsp Olive oil, lay the chicken slices in the oil. About 3 minutes on each side till they are slightly browned.Set aside on a paper towel to drain.
  • Add the butter, scrape the bottom, and the chicken browned bits for extra flavor in the same pan. Add the onions and garlic and saute. Add the tomatoes and stir well.
  • Lower the heat and add a tbsp of flour and whisk it in for a minute. Next, add the White Wine, Chicken Stock, Capers and stir well. Simmer it for two to three minutes. Season with Salt & Pepper.
  • Add in the heavy cream, Cajun seasoning, and red chili flakes and stir well. Let the sauce thicken a bit! Now add the cooked pasta, topped with the baby spinach and parmesan cheese. Toss everything together well.
  • Lay the chicken slices on top, give them a push into the pasta, so they'll absorb all that sauce and flavor. Serve warm with your favorite glass of wine!

Notes

1.Chicken slices can be cut according to your preference. I like thin crispy slices with    my pasta. 
 
2.Tomatoes- You can even use grape tomatoes instead of Roma tomato if you prefer.
