Easy Egg Puffs – Flaky and Delicious!

When I think of my childhood back in India, my cherished memories are related to food. Talking about snacks, Puffs have always been my favorite! I’m sure a lot of Indians who are up there share my similar love for Puffs too. They are too good to resist and fairly easy to make as well.

Puff Pastry Goodness!

The puff pastry is the main star of this snack. You can always make your own Puff Pastry, which I really love to do when I find a time that is. Making your own is a little time-consuming, hence, I always keep a store-bought Puff Pastry in my freezer, for days like this. Personally, the brand that has yielded good results every time is the Puff Pastry Frozen Sheets from Pepperidge Farm. Just thaw them in the refrigerator the night before, and they are ready to use the next day. Make sure, that you don’t keep them at room temperature until you are ready to use them.

How to make Egg Puff’s

There is a 3 step process in making these egg puffs. Firstly, boil the eggs. Secondly, prepare the onion-tomato mix. And finally, prep the puff pastry sheet, fill it in with the mix and a slice of egg, and bake! Voila, in about 30 minutes, you have crispy and flaky egg puffs to snack on!

The mix has very easy ingredients incorporated in it ;

  • Onions: I’ve used a medium-sized onion, sliced finely
  • Tomatoes: Regular Vine tomatoes or Roma tomatoes will do, essentially to bring that tangy flavor in.
  • Turmeric Powder: A little goes a long way with turmeric powder.
  • Red chili Powder: For a little spice to blend in well with the tanginess of the tomatoes, like this one. If you prefer less heat, you can use Kashmiri Chili Powder instead. It has less heat and adds more color.
  • Garam Masala: A ground mix of whole spices adds a pungent flavor to the mix.
  • Cilantro: You can never go wrong with a touch of fresh herbs to any dish.
  • Oil: You can use any neutral oil of your choice; I have used sunflower oil here.

Perfect for parties and entertaining

If you’re looking for ideas for appetizers, you definitely need to give this a try. These are best served warm out of the oven to contain that flakiness and crispness of the puff pastry. However, the mix and the eggs can be prepared in advance, store in the refrigerator. Thaw the frozen puff pastry in the fridge. Put them together and bake right before your guests arrive for a perfect appetizer/snack.

Ingredients
  

  • 5 eggs
  • 1 Onion , medium sliced
  • 2 Tomatoes , chopped
  • 1/4 tsp Turmeric Powder
  • 1 tsp Garam Masala
  • 2 tsp Red chili powder Sub with Kashmiri Chili powder for lesser heat
  • 2 tbsp Oil; any neutral oil of your choice
  • 1 tsp Salt
  • 1/4 cup Chopped Cilantro
  • 1 1 lb Frozen Puff pastry sheets ex: Pepperidge Farm
  • 1 Egg, beaten for egg wash.

Instructions
 

  • Preheat the oven to 400 F. Prepare a baking tray with aluminum foil and set it aside.
  • In a saucepan, place the eggs and add water till it covers them. Close it with a lid and place it on a stove on low to medium heat, cook for about 15 -20 minutes , till they have boiled well. Remove from the stove and set aside to cool.
  • Once cool, gently peel the egg shells off by tapping on the kitchen surface. Slice them into halves and set them aside.
  • In a separate pan, add oil , once warm add in the sliced onions, and saute for 3 minutes till translucent. Next, add the tomatoes and saute till slightly cooked.
  • Add the spice powders and salt and mix well till everything is combined. Add the cilantro and mix well. Turn off the heat.
  • On your kitchen surface, dust some flour and gently roll out 1 sheet of puff pastry. Dust some flour on the pastry and very gently using a rolling pin , roll the dough to slightly expand to the sides. Just once or twice, so it takes the form of a workable dough.
  • Using a dough cutter or small knife, cut equal squares of 9. Spoon a tsp of the onion-tomato spice mix in the center. Put a slice of the halved egg , yolk facing the mix .
  • Keep a small bowl of water close by. Take the opposite sides of the pastry and seal together using a little water. Continue the same process with the rest of the puffs.
  • Lay them gently on the baking tray. Gently brush the tops and sides of the puff pastry with egg wash.
  • Bake in the preheated oven for 25-30 minutes, till it's golden brown on top.

Notes

Boiling the eggs:

I have used a very traditional method here to boil the eggs. If you have an Instant Pot, you can always boil the eggs in it, while you prepare the mix.
Simply pour water in IP, place a steamer basket in the water and eggs in it. Close the lid, and set to manual mode, and set time to 5 minutes. Release pressure when done and eggs are ready!
