Easy Spinach, Broccoli Slaw, and Tuna Sandwich

Here’s a sandwich that is Healthy & Delicious at the same time! Tuna & Broccoli Slaw in a delicious dressing on a bed of Spinach between two toasted Brioche Buns!

I love shopping at Trader Joe’s and Whole Foods! It excites me to explore their aisles and check out what’s new. For example, on one of my exploration trips to Whole Foods, I came across their Broccoli Slaw packet in the veggie section and immediately put it in my cart! Rather than just incorporating it into a salad, I went ahead and added it to this Tuna salad for a healthy and delicious sandwich.

Part of why I love what I do is because it gives me the liberty to experiment and explore different options with food. And I enjoy sharing it on this platform here with you folks! This sandwich, in particular, is super quick and easy and a healthy option too. If you prefer a cold version of this salad sandwich, simply make the tuna broccoli mix ahead of time and refrigerate till ready to use.

What’s Broccoli Slaw?

Broccoli Slaw, as the name states, is made from the shredded stalks of Broccoli. A lot of people make varied versions of broccoli slaw. Essentially, the stalks of the broccoli contain the most Fiber, while the florets have a ton of nutritious elements! Try a Broccoli Slaw for your next BBQ party or yourself as an alternative to Cole Slaw.

Ingredients in this sandwich:

  • TUNA : Incredibly nutritious, is packed with Protein,Vitamins and Omega 3 Fatty acids. Its a low calorie, high-protein food . Ive used canned Albacore tuna in this recipe.
  • Baby Spinach: Eating leafy greens raw is the best approach for your body to absorb those nutrients.
  • Broccoli Slaw : A mix of shredded broccoli stalks , shredded carrots .
  • Brioche Buns : I bought these from Whole Foods as well.They have the best Brioche Hamburger Buns.
  • Dressing : A simple dressing containing of Mayo,Dijon Mustard , Olive oil, Lemon juice .
  • Red Onions: They add a good crunch to the whole salad.
  • Cilantro: The touch of fresh herbs, completes this sandwich.

Quick & Easy Tuna ,Broccoli Slaw & Spinach Sandwich

A delicious and quick sandwich with tuna, broccoli slaw and spinach in a creamy dressing!

Ingredients

  • 1 5 oz Albacore Tuna can, drained check notes
  • 1/4 cup Broccoli Slaw
  • 1/4 cup Red Onions, chopped
  • 1/4 cup Cilantro , chopped check notes
  • Baby Spinach, a handful
  • 4 buns Brioche Hamburger Bun, toasted slightly check notes

Dressing:

  • 2 tbsp Mayonnaise
  • 1 tsp Dijon Mustard
  • 1/2 tsp Olive oil
  • 1/2 Juice of half a lemon
  • Salt & Pepper , for seasoning

Instructions

  • Drain the tuna from the can, move it to a bowl, and shred it to medium bite-size pieces using a fork. Add the chopped onions and cilantro to the Tuna, set aside.
  • In another bowl, put all the dressing ingredients and whisk till combined well. Add it to the tuna mix and blend it all. Check for seasoning. The dressing shouldn't be too runny.
  • Toast the Brioche buns slightly with a touch of butter for extra flavor.
  • Make the sandwich! Arrange a layer of baby spinach on the Brioche bun, topping with a tbsp or more tuna mix. Cover the top with another toasted bun. Enjoy the sandwich with your favorite drink.!

Notes

Tuna: I have used canned tuna for a quick sandwich. If you prefer to use fresh tuna, you can do that as well! Pan sear or bake tuna fillets, and shred them. Proceed with the dressing.
Baby Spinach: Alternatively, you can use your choice of leafy green mix, like arugula or kale.
Cilantro: I like the taste of cilantro; you can add your preference of herbs such as Parsley.
